It is a standard long grain type of rice, but like the northern diet in China, they also eat more wheat based noodle, dumplings and steamed breads, rice is a winter dish as there flour supplies can get low. But most Chinese use the same type of rice, the exception is glutinous rice used in dumpling, steam rice dishes, soups and in flour for noodles made with rice flour.
